Ingredients
For the filling
- 1 lb. ground beef
- 1 onion, finely chopped
- 2 garlic cloves, minced
- 1 tablespoon cumin
- 1 tablespoon coriander
- 1 tablespoon turmeric
- Salt and pepper, to taste
- 2 tablespoons vegetable oil
For the pastry
- 2 cups all-purpose flour
- 1/2 teaspoon salt
- 2/3 cup water
- 1/4 cup vegetable oil

Instructions
Step 1
In a large skillet, heat 2 tablespoons of vegetable oil over medium-high heat. Add the onion and garlic and cook until softened, about 5 minutes.
Step 2
Add the ground beef to the skillet and cook until browned, breaking it up with a spoon as it cooks.
Step 3
Add the cumin, coriander, turmeric, salt, and pepper to the skillet and stir to combine. Cook for an additional 2-3 minutes until the spices are fragrant. Remove from heat and let the filling cool.
Step 4
In a large bowl, mix the flour and salt. Add the water and vegetable oil and stir to form a dough.
Step 5
Knead the dough for a few minutes until it is smooth and elastic. Cover and let it rest for 10 minutes.

Preheat the oven to 375°F (190°C).

Roll out the dough on a floured surface until it is very thin. Cut the dough into triangles.

Spoon a tablespoon of filling onto the center of each triangle. Fold the edges of the triangle up and over the filling to form a pyramid shape. Pinch the edges of the dough together to seal.

Place the Beef Sambuus on a baking sheet lined with parchment paper. Bake for 20-25 minutes or until golden brown.

Serve hot with your favorite dipping sauce.
Alternative Cooking
Heat a large saucepan or deep fryer with enough oil to submerge the sambusas to 365°F (170°C). Fry the sambusas in small batches until they turn golden brown, then remove them from the oil and place them on a plate lined with paper towels to drain the excess oil.
