  • Potatoes (russet or Yukon gold are good choices)
  • Vegetable oil
  • Salt


Step 1

Peel the potatoes and cut them into thick, uniform wedges.

Step 2

Place the potato wedges in a large pot and cover with cold water. Add a pinch of salt and bring to a boil. Boil for 5-7 minutes, until the potatoes are just tender.

Step 3

Drain the potatoes and spread them out on a clean kitchen towel to dry completely.

Step 4

Heat vegetable oil in a deep frying pan or pot to 375°F (190°C).

Step 5

Fry the potato wedges in batches for 3-4 minutes or until they are golden brown and crispy.

Step 6

Remove the chips from the oil with a slotted spoon and place them on a paper towel-lined baking sheet to drain.

Step 7

Season the hot chips generously with salt and serve immediately.
