This grilled beef salad is a delightful combination of savory and sweet summer flavors. Tender grilled steak sits atop a bed of crisp lettuce with juicy corn, cherry tomatoes, and sweet raisins. This dish is satisfying and flavorful and it will wonderfully complement your summer BBQ.

Ingredients

  • 1 pound (450g) beef steak (such as sirloin or ribeye)
  • 4 cups lettuce, torn into bite-sized pieces
  • 1 cup corn kernels (fresh or canned)
  • 1 cup cherry tomatoes, halved
  • 1/2 cup raisins

For the marinade

  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon paprika
  • Salt and pepper to taste

For the dressing

  • 3 tablespoons balsamic vinegar
  • 2 tablespoons olive oil
  • 1 teaspoon Dijon mustard
  • Salt and pepper to taste

Instructions

Step 1

In a bowl, mix together the olive oil, minced garlic, dried oregano, paprika, salt, and pepper. Rub the marinade all over the beef steak, ensuring it is evenly coated. Cover and refrigerate for at least 30 minutes, or preferably overnight, to allow the flavors to meld.

Step 2

Preheat your grill to medium-high heat. Grill the marinated beef steak for about 4-5 minutes per side, or until it reaches your desired level of doneness. Remove from the grill and let it rest for a few minutes before slicing thinly against the grain.

Step 3

In a large mixing bowl, combine the torn lettuce leaves, corn kernels, halved cherry tomatoes, and raisins. Toss gently to mix.

Step 4

In a small bowl, whisk together the balsamic vinegar, olive oil, Dijon mustard, salt, and pepper until well combined.

Step 5

Arrange the sliced grilled beef on top of the prepared salad. Drizzle the dressing over the salad just before serving, or serve it on the side for individual preference.
