Ingredients

  • 1 lb. beef skirt steak, sliced thinly
  • 1/4 cup chopped fresh cilantro
  • 2 cloves garlic, minced
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon chili powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon olive oil
  • 8 small corn tortillas
  • Lime wedges, for serving


For serving

  • Diced onions
  • Chopped cilantro
  • Salsa
  • Guacamole
  • Sour cream

Instructions

Step 1

In a mixing bowl, combine the cilantro, garlic, cumin, chili powder, salt, and black pepper.

Step 2

Add the sliced beef and toss to coat evenly with the marinade. Let it sit for at least 10 minutes or up to 1 hour in the fridge.

Step 3

Heat the olive oil in a large skillet over medium-high heat. Add the beef and cook for 3-5 minutes or until browned and cooked through.

Step 4

Warm the tortillas in a dry skillet over medium-high heat, flipping once, until warm and slightly charred in spots, about 30 seconds per side.

Step 5

Divide the beef among the tortillas and top with diced onions, chopped cilantro, salsa, guacamole, and sour cream.

Step 6

Serve with lime wedges on the side for squeezing over the tacos.
