Ingredients
- 1/3 cup light soy sauce
- 2 tablespoons vegetable oil
- 2 teaspoons sesame oil
- 2 tablespoons soy mixture
- 1 1/4 pounds medium peeled cleaned shrimp, thawed if frozen
- 1 pkg (10.8 oz) frozen mixed vegetables
- 2 pkg (8.8 oz each) fully cooked rice, heated
- 3 eggs, beaten

Directions
[post_ads]1 of 1 Heat broiler. Set top rack at least 4 inches from heat source. Whisk soy sauce, 1 tbsp of the veg oil and sesame oil in a medium bowl. Toss 2 tbsp soy mixture with shrimp and thread onto 4 skewers. Meanwhile, heat remaining 1 tbsp veg oil in a large nonstick skillet over medium. Add frozen mixed vegetables (we used a broccoli, snap pea, carrot and water chestnut mix) and 1/4 cup water. Cover and cook 4 min. Uncover and add rice and remaining soy mixture. Push to one side of skillet and add eggs; cook, scrambling, 2 min. Stir eggs into rice, cover and keep warm. Broil shrimp 6 min, turning once. Tip: Skip the sesame oil if you don't have it
